Currently chef Ayers is in the process  of restablishing himself as a innovative restaurateur. Calafia's fundamental goal is to provide healthful artisan style hand crafted sustainable cuisine accessible to the greater public in a fast and affordable format. As many ECS chefs can be found back stage, Charlie leads the pack from philanthropic rock star dinners at Harmony Festival to former tour chef for the Grateful Dead and other rock stars. You can consult with Chef Charlie as he is also available for what he calls "innovative corporate well being". To create a program, Charlie will consult any size company, restructure their corporate food service program or design a Micro Kitchen Food Service program for the company's needs along with developing a desired corporate culture. Like all of ECS chefs Charlie embraces opportunities for private small cooking classes or intimate dinner parties to any destination you desire.

Select a quality sour dough or French bread with a diameter of 2in

Slice on the biaz and reserve for dipping and hot grillde

In a Glass Bowl add 4 tsp of Cinnimon

1 tsp of Nutmeg

3 tsp of local qualiy honey

Wisk till combined and add 1/2 cup fresh Seville oranges

Beat 5 Omega 3 Cage free Eggs add to batter

Grilled to perfection garnish with Organic Powdered Sugar and Agave Nectar
